This could be a tough one and I’m not sure how well it will work. You can try tape them with Audacity but I’m not sure if it will record both your voice and the person you are having the conversation with. From the source list you can select either “What U Hear” or Line-In but it seems to be there should be a way to use it for your purpose.
Check it out, http://audacity.sourceforge.net/ I like the beta version 1.3. You will also need the LAME MP3 encoder associated with Audacity to export recordings as MP3 files.
